Ingredients:

  • 2 eggs (very fresh, at room temperature)
  • 2 tbsp milk (any kind)
  • 1/4 tsp vanilla extract
  • 1/4 cup (30g) all-purpose flour (you can sub oat flour, but APF gives most authentic texture)
  • 1/4 tsp baking powder
  • 2 tbsp monq
  • A few drops lemon juice or vinegar (to stabilize egg whites)
  • Oil or butter for greasing pan

Instructions:

Step 1: Separate eggs

  • Carefully separate egg yolks and egg whites into two clean bowls.
  • Make sure no yolk gets into the whites, or they won’t whip properly.

Step 2: Yolks

  • In the bowl with yolks, whisk together:
  • Yolks + milk + vanilla extract.
  • Sift in flour + baking powder.
  • Mix until smooth and thick.

Step 3: Whip egg whites

  • Using a hand mixer, beat egg whites until they start foaming.
  • Add a few drops of lemon juice/vinegar (optional)
  • Gradually add monq (little by little).
  • Beat to stiff peaks — when you lift the beater, the peaks should stand straight.

Step 4: Fold

  • Take 1/3rd of the whipped whites and mix roughly into the yolk batter (this lightens it).
  • Then gently fold the remaining egg whites into the batter using a spatula.

Use light, scooping movements — don’t deflate the air!

Step 5: Cook (very gently)

  • Heat a non-stick pan on low heat.
  • Lightly grease it.
  • Scoop batter to form tall pancake mounds (use an ice cream scoop or large spoon).

(Optional: use ring molds if you want perfect shapes.)

  • Add a few drops of water to the empty parts of the pan and cover it with a lid (this creates steam = extra fluff).
  • Cook covered for 3–4 minutes on low heat.
  • Carefully flip using a spatula.
  • Cook another 3 minutes covered.

Step 6: Serve!

  • Stack gently.
  • Dust with a little extra monq with a strainer, top with whipped cream, berries, or Greek yogurt if you want!

Important tips:

  • Low and slow cooking is key — if you rush, they’ll collapse.
  • Whipping the egg whites perfectly is everything.
  • Monq will not caramelize like sugar — no browning on the pancakes, but the flavor stays sweet and clean!
