Sugar-Free Tres Leches with Monq
Ingredients:
For the cake:
- 1 cup all-purpose flour
- 1/4 cup Monq (adjust to taste)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 5 large eggs (room temperature)
- 1 teaspoon vanilla extract
- 1/2 cup whole milk (or almond milk for dairy-free)
- 1/4 cup melted unsalted butter
For the tres leches syrup/soak:
- 1/2 cup heavy cream
- 1/2 cup whole milk
- 1/2 cup evaporated milk
- 1/4 cup monq (adjust to taste)
For the topping:
- 1 cup heavy whipping cream
- 2 tablespoons Monq (adjust to taste)
- 1 teaspoon vanilla extract
Instructions:
Step 1: Prepare the cake
- Preheat your oven to 350°F (175°C) and grease or line a 9x9-inch baking pan.
- In a bowl, whisk together flour, Monq, baking powder, and salt.
- In a separate bowl, beat eggs for about 5 minutes until fluffy. Add vanilla and melted butter and mix well.
- Gradually mix in the dry ingredients, alternating with the milk. Mix until smooth.
- Pour into the pan and spread evenly.
- Bake for 20–25 minutes or until a toothpick comes out clean. Cool completely.
Step 2: Make the tres leches syrup/soak
- In a saucepan, combine heavy cream, whole milk, evaporated milk, and Monq.
- Bring to a gentle simmer for 5 minutes until slightly thickened. Cool completely.
Step 3: Soak the cake
- Once the cake is cool, poke holes using a fork or toothpick.
- Slowly pour the syrup evenly, allowing the cake to absorb it. Let sit for 30–60 minutes.
Step 4: Prepare the whipped topping
- Whisk together whipping cream, Monq, and vanilla until soft peaks form. Continue to stiff peaks.
Step 5: Assemble and serve
- Spread the whipped cream evenly over the soaked cake.
- Chill for at least 2–3 hours, or overnight for best results.
- Garnish with fresh fruit, chopped nuts, or cinnamon if desired.
